Marble Pound Cake (Pushkin Bakery)

I was surprised when I cut into this marble pound cake from Pushkin Gluten and Dairy Free Bakery that it was made with a mini bundt cake pan (the center was slightly hallow – see the powder sugar dusting).

The texture was spongelike and not overly grainy like most gluten free treats. It was moist, just like the owner of Pushkin said, even after freezing and thawing on the counter. There was very little chocolate flavor from the minimal marbling so it’s more for aesthetics than flavor.
